This gyuto has been finished to a mirror shine, with the core brightly jumping out. The core steel is Apex ultra at 64hrc. The cladding is 30 layer wrought/nickel suminagashi.
The entire blade has been deep etched, aiding in food release and visualising the wrought layers.
The handle is stabilized Yew from somewoodblanks. It has a stainless steel bolster plate. The blade size is 242x57mm and the weight is 207g. Truly a beautiful piece which i am very happy with.
