These werkgericht gyuto's are back to basics. Chunky spines(7-8mm out the handle) with heavy distal tapers, good geometry and thin edges. Very thin mid and tip sections. Simple and extremely effective.
These measure 245x54mm and weigh 210-220g. The handles are WA handles made from Australian ringed gidgee. The blades are O1 high carbon tool steel at 62hrc. A simple and easy to sharpen/maintain steel.
There is some variance between the blades but they are very close to eachother, which is why theyre sold in this listing togheter. There is no choice in which one you get.
